THE PERFECT RECIPE FOR A SNACK ATTACK!
It was a warm spring day and as Maia sat slogging through homework, she of course started hankering for a pick me up. I had recently received the Healthy Hormones for Women Health and Meal Plan from Body Fuel Nutrition, so to give her a break and to not have her reach for the typical snack fare, we looked through the uber easy (not to mention tasty) recipes and settled on:
CHERRY CORN MUFFINS
• 1/2 cup butter or coconut oil
• 1/2 cup sucanat
• 1/2 cup maple syrup
• 2 large eggs
• 1 tsp vanilla
• 2 cups spelt flour or brown rice flour
• 1 cup stone-ground yellow cornmeal
• 1 1/2 tsp baking powder
• 1 tsp baking soda
• 1/2 tsp sea salt
• 3/4 cup yogurt
• 1/2 cup whole milk or milk alternative
• 1 cup fresh cherries, pitted or 1/2 cup dried cherries
Cream the butter or coconut oil together with the sucanat. Once
soft and creamy, add the maple syrup, eggs, and vanilla. Mix the dry
ingredients together and add the yogurt and milk. Add the cherries
at the end and mix. Grease a large muffin tin with coconut oil.
Divide the batter into the 12 muffin tin cavities. Bake at 325°F for
20 to 25 minutes.
Super easy to make (Maia did it all). Soon the kitchen was rich with the comforting scent of muffin yumminess and when done, we both indulged. To die for. Homework has never been this much fun.
